Just curious if I've used all my channels, can I quaff a potion of this and get 2 more if I use them in the next 3 minutes?

Technically, I believe so. This has been talked about in other threads before, whether a temporary bonus grants you things like this, and I think the consensus reached was "yes, but that's kinda dumb, so your GM might say no". LOL

Nope, it's pretty much the same as bonus spell slots for high casting stat: not increased by temporary bonuses.
The rules spell out exactly what is affected by temporary bonuses, and channel usages and spell slots aren't included.
The DC for the effect is increased though.
As I understand it, the rationale for not affecting Channel usages/day, spell slots/day, or Rage Rounds/day,
is that those being 'per day', an effect increasing the score for less than a day isn't enough to give you more usages/etc:
You need to have had the ability score for 24 hours since that is the 'recharging period' for those effects.

It seems like it would be pretty bizarre to try and track Rage Rounds when Rage temporarily increases your CON,
if that gave you temporary Rage Rounds ever time it would be pretty bizarre,
especially since they are temporarily created every time, every time you Rage you would get NEW temporary Rage Rounds,
meaning you could spend only 1 real Rage Round enter Rage and use the (2+ * Level) temporary Rage Rounds to Rage for an extended period of time each time you Rage. Same for Channel, if you temporarily increased it, use the temporary Channel usages, the spell ends, you re-cast the spell, and have NEW temporary Channel usages.
Certainly, if you were designing the game to work otherwise, you could have a sub-rule to avoid that situation, but that would require an explicit rule so that such temporary 'slots' can't be refreshed like that, a rule that is obviously not in the actual rules.

The rules do explain how after 24 hours of continuous duration, an effect is considered 'permanent',
and DOES then affect ALL usages of the ability score, including those usages/day 'consumables'.
Note that the effect doesn't really need to literally be permanent, and with Extend Spell you can easily achieve 24+ hour durations.
(as the rules say, 24 needs to pass before the full effects kick in, even for literally permanent effects like Wish)
