Hi there,
I'm trying to get my subscription paid for using my new and updated credit card, but it seems the system is defaulting to my expired credit card instead of using the card that I could swear I set as the default payment method. I have two tickets in without responses, one of which is a week old at this point. Please advise.

You are doing the right thing. Email ticket to customer.service@paizo.com and posting on the forums for visibility isn't a bad idea.
Some people are saying they have tickets over a month old without an official response.
I would also recommend posting in the Monthly Subscription post for visibility.
