While this might be a little late for a lot of people, I've started to create updated maps using the Forgotten Adventures map assets (In the same way that the current Foundry VTT modules supplied by Paizo do). These aren't recreations, in the sense that while using my graphical editor of choice I am using the original maps as initial templates.
With Extinction Curse my group only play every other week for a couple of hours, so we are currently at the midpoint of book 2. As such that is where I have started from, but will begin adding more of these as I go along, and I will backtrack and do some of the other maps when as as I can. At this point the link below includes Lower Moonstone Hall and the Celestial Menagerie map. I do have Upper Moonstone completed, but there are some fixes I want to make before adding them to the public folder.
Additionally, as I am a FoundryVTT user I have include the json map export from my world, and the background/foreground webp files for the maps if you want to import and have all the fancy stuff of over hanging cobwebs and the link.

By the way, you may or may not be aware that an Extinction Curse map remake Foundry module exists and has maps for books 1 through the beginning of book 5, but it doesn't have the rest of book 5 or book 6 yet.
It looks like it includes maps from 3 different creators at the moment, Lios, Robster, and Luebbi, while the module itself is managed by Ustin. If you want, maybe you can can contact them to see if you can get your maps included in that module, or to see if they need people to work on maps for the later books.
