Spoilers for Starfinder Scenario 4-02 Settling Accounts:
There is a race of rabbit folk introduced in 4-02 Settling Accounts! They are called ixtli, and they're an NPC race (for now, at least) in that they don't have formal stats. There's a few pieces of art, though, and a side-bar about the species that informs what their stats could be, if you were up for a little home brewing.
I'd take a stab at saying something like: +2 Dex/-2 Con, 40 ft base speed, some kind of "wide field of vision" (+2 Racial to Perception, maybe cannot be flanked?) and some sort of "always count as having a running start for jumps" type ability?

You could be an Entu-Symbiote that is bonded to a medium sized rabbit species. Would just need to take the Medium & Burrow speed options.
I second this recommendation, as it requires the least homebrewing to make work (I do not think homebrewing is bad, it's a vital part of ANY ttrpg, I just prefer not using it as the default solution for EVERYTHING).
