Apologies in advance if this isn't quite the right category for this topic, but I figure it is somewhat relevant since subscriptions are being changed a little.
When it comes to the subscriptions, is buying every release required if you are subscribed? Asking because my understanding is that having the right/enough subscriptions can get you discounts, but how does that work versus actually buying the product? Are you just billed and sent everything automatically? Are you alerted that the thing has been released and can elect to buy/not-buy at your leisure? How, in essence, does a subscription work? And while most of my games are online on Roll20, I have been thinking of running some games at my local game shop. So a follow-up question is whether or not any discounts apply to pdfs and the like too?
TL;DR Please explain subscriptions and discount interactions. Maybe also how that interacts with regards to physical vs digital media. Will also accept a link if all this is definitely explained somewhere and I'm being dumb and missing it.

You can cancel a subscription at any time; there's no requirement to buy stuff for a year or six months or whatever.

Once a month, you will get an email about a week before products are released. This is called "the auth." It will show you what products you are scheduled to receive and how much the total will be, with shipping. It also "authorizes" your payment method; they basically poke your credit card with the expected total to make sure you can pay for it. This authorization is not a charge and will disappear from your account within a few days. If there are any products you don't want, you have about a week to cancel or change your subscriptions.
About a week later, the shipping window opens. Over the course of about ten days, all subscription products will be shipped. When you receive your subscription email, your payment method will be charged, and you will be granted access to a free PDF of any product which a subscription qualifies you for.
Virtually all Paizo subscriptions include a free PDF, and some include a discount on the physical product as well. If you have at least four different subscriptions, you get Paizo Advantage, a 15% discount on any product Paizo.com sells with the exception of non-Paizo PDFs; you also receive a free subscription to either the Pathfinder or Starfinder Society scenarios for organized play. If you have at least six subscriptions, you receive both free scenarion subscriptions. (Note that scenarios are PDF-only; there is no physical product.)

Going to take a look at the links when I get home. Still at work. Thankee to both of you, though. One more question, if I may. If you decide you don't want a product, and you cancel the subscription to dodge, are you able to sign back up once the offer has passed?
Yes. There is a subscription that I have initiated three times and canceled twice. I was never admonished that I might be running low on times I could do that.

Absolutely. Back when AP Map Folios were part of the Campaign Setting subscription, some people would routinely cancel once every 6 months to avoid getting the map folio for an AP they weren't running and then re-up for for the books about Golarion.
As another example, people with subscriptions to the Adventure Card Game often cancel their subscription when a large base set comes along, due to the cost of shipping an item they can get locally or with free shipping from another retailer, and then resubscribe for the smaller and cheaper-to-ship class decks that come in between.
