Greetings, GreyWolf! Good question. Generally Society characters are meant to match the Core Rules as much as possible. This helps new players transition to Society play without a huge set of "house rules" to adapt to.
To expand on what BNW was alluding to, Starfinder Society gives new characters a sort of "trial period" where players are allowed to rebuild and tweak whatever them however you like.
You could play your first game as a Vesk Soldier with 18 Strength and Weapon Focus, your second game as a Shirren Mystic with 18 Wisdom and Harm Undead, and your third game as an Ysoki Mechanic with 18 Int and a Drone.
By the time you've played your first session above 1st level with that character (usually your 4th session) that character is "locked in". Your only options for a rebuild at that point would be a mnemonic editor, which you can't acquire access to until a couple levels later.

I knew the question would come up eventually, I just didn't expect it so soon. I am still figuring out a lot of things about this system having not played any system with any kind of tie to DnD before.

Sorry, this made me chuckle. Paizo Society play has more house rules than any game I've ever played or seen.
