The best way is to leave as much as possible and just do the stat blocks you need.
Most previous edition monsters exist in PF or have been translated elsewhere-- look for the monster stat block in the PRD and if it's not there google search "Monster name pathfinder" and you will usually find a blog with an acceptable translation.
Then all you have to do is to convert the NPCs villains that you need stats for.
I have been doing a direct transliteration of their ability scores unless there is a major mismatch and assume the every four levels progression is accounted for that (making adjustments as need be to meet feat requirements).
Then I try to match the NPC to the flavor-- if it's a swashbuckling type that in AD&D had the "fighter" class I might use a Fighter, or a Swashbuckler, or a Duelist-- basically whatever is a cool build that fulfills the role/purpose.

I've ported 3 AD&D1 modules to 3.5, which is not too far from PF, mostly I just converted the monsters by using the updated version and fixing the HP as per their variation from the average for this or that monster. I noticed that the result implied use of MUCH more powerful player characters in the 3.5 version than in the original (original was targeted at lvl 8-12 characters, lvl 12 was the absolute minimum to enter the updated version, and the top module included some CR 20+ encounters).
I must admit I used my instinct a lot in converting the DCs etc for traps, secret doors and the like.

And I'm getting antsy about PF2... the ease of conversion between PF1 and AD&D 3.xx was a major good point, helping conversion of old material to the newer system, and of newer material to the older one... no way PF2 will be so easy to convert with D&D, whatever the version, even 5... makes me wonder if I'll convert, given I've got a lot of old stuff, and little budget for new stuff.

I've you ported AD&D1e modules to 3.5, you should have no problem converting PF1 content to PF2.
