I assume they get familiars/hexes as normal, since nothing is replacing them, but I'm double checking anyway.
Yessir. Just as with any other archetype, as long as it doesn't specify that you lose an ability or it is replaced, you keep it. However, keep in mind that since all spheres are talents taken by a character and don't exist externally, you wouldn't store sphere abilities in your familiar - much as a wizard can't pull every sphere out of a spellbook.
