fighter one shotting enemies is what they do since level 1, at least if you play the optimal two handed fighter. So yeah it doesn't change much.

Fighter in an ideal situation, as in he can full attack an enemy...the enemy is dead. Even mythic threats get one shot, like the guy who posted the fighter fighter 20/mythic 10, one round to kill cthlhulhu again assuming ideal conditions.

Now the biggest problem for the martial is usually to get to his target and finish him. At higher levels, brute monsters add insult to injuries by being caster. Brute monsters are usually more brute than the fighter/martials themselves and can cast spells too.

Archer martials don't have this issue but sometime suffer from things like DR (if they don't have clustered shot).

Spellcasters focusing on evocation is usually what you see on gaming table because its "fun" but yeah the more effective build usually relies on no save effect or using summons[handy disposable minions that you dont need to heal and are more useful than your martials] or the use of broken spells [Terrible remorse is quite possibly one of the most broken spells ever made.]

If you want to make magic more palatable, perhaps try limiting casting to 2/3 casters. Warpriest and Inquisitor are good stand-ins for Cleric, Magus, Bard, and Unchained Summoner will cover the important bases that Wizard, Sorcerer, and Arcanist do, and there's a Magus archetype if you desperately want to be able to hex people like a witch. Druid can be played as a Hunter. You might end up losing out on Shaman and Oracle, but that's an acceptable casualty if you're going to nerf casting, and you can always bring them back with only 2/3 of their list, but more spells per level.

Alchemist/Investigator (Turning into a Giant Monster, Normal Combat)

Cleric/Oracle (Group Buffing, Self-Buffing, Summoning, Status Removal, Normall Combat)

Warpriest (Group Buffing, Self-Buffing, Status Removal, Normal Combat)
Inquisitor (Group Buffing, Self-Buffing, Status Removal, Normal Combat)
Paladin (Self-Buffing, Normal Combat)

Druid (Blasting, Summoning, Battlefield Control, Turning into a Giant Monster, Normal Combat)

Hunter (Blasting, Summoning, Battlefield Control, Normal Combat)
Ranger (Uh... Utility? And Normal Combat)

Witch (Hexes, Debuffing, Group Buffing)

Magus (Hexes, with a specific archetype)
