Your list is why I try and get the parties I am with to use stealth. Even my character with -15 armor check penalty can sneak past an encounter if it is 100 feet away, through two foot thick wall of stone. ;)
not all GMs though apply the modifiers for the monsters or bad guys to sense things.
Fly is the most often hand-waved skill I think - it seems so - I have quite a few flying-related characters so I know the flying, riding and handle animal rules well and people get the most incensed about having to make fly checks or things like 90 degree turns or hovering.
