Also, make sure your cavalier is balanced with his focus and not to focus too much on mounted combat. My Cavalier has two feats for the Monstrous mount feat chain simply because I wanted a Griffon to screw around with, but the rest are normal fighter type feats. He will find himself without a mount more often than not.

Less on the scenario side more tips and tricks for getting to use the mount
Carry companion Lets you turn your mount into a play sized statuette that you can call out when you need him. Buy a scroll of it. Someone in the group should have it on their list, or have enough UMD to be able to fake it.
Spider climb.
If all else fails, hosteling armor or shield when he gets higher level.

Be careful with this one. Many of the encounters are laid out perfectly for a Cavalier, but there are restrictions on mounts. So with the wrong mount this goes from one of the best possible scenarios for a Cavalier to a 4 hour long taunt of "wouldn't you just love to have your mount right now?"
Murder on the Silken Caravan isn't bad for a Cavalier, either.

It doesn't work unfortunately. Paladins and cavaliers that could ride say, a pony or a wolf, still can't select one as a mount because of the PFS restrictions on mount selection. If that doesn't get waived or clarified you're better off banning the feat to avoid the trap.

I've certainly gotten a good deal of use out of my cavalier's mount. Human with a horse, several mounted combat feats, as traditional as you can get. In addition to those mentioned, Slave Pits of Absalom and Before the Dawn (especially pt II, Rescue at Azlant Ridge) were good.
The end of Season 5 was fantastic for a cavalier, though I played them at levels 6-7. Assault on the Wound, Vengeance at Sundered Crag, and ESPECIALLY Siege of the Diamond City.
At higher levels, there are often larger opponents, so dungeons need to be larger. Don't feel obligated to tell him to go halfling or Undersized Mount. Narrow Frame and Sure-Footed (Animal Archive) are great for his mount, maybe a few scrolls of Carry Companion (although I don't think he'd actually need the 50 uses that warrant the hosteling enchantment).
Wheeling Charge (Cities of Golarion, city of Vigil in Lastwall) is outstanding, letting you charge through allies' squares and make 90-degree turns during charges. Tactically it is very, very useful, especially to do a Ride-By without getting stranded too far from allies.
