My question is this: Is it possible, under the rules, to have the Folding Plate magic armor become Hell Knight Plate? Looking at the item description for the folding plate on the pfsrd website:
"On command, the brooch transforms in a clatter of metallic plates and panels to instantly cover the wearer in a complete suit of +1 full plate, with the design of the brooch displayed on the armor's breastplate."

and looking at the hell knight plate armor:
"These distinctive suits of armor are a special type of masterwork full plate that, when worn by a character with levels in the Hell Knight Commander prestige class, grants additional effects."

Going by the official description of both Folding Plate and Hell Knight Plate, it seems that it should be allowable, since both are full plate armor and Hell Knight only gives extra bonuses above and beyond normal full plate if you are a Hell Knight commander, and that is due to a class feature, not the armor itself. Seems like Hell Knight Plate is simply full plate with a different aesthetic design.

In various places, magic armor is specifically called out as being Hellknight plate. I'd err against it.
In home games, though, I think it'd be just fine. ^_^
