Hello!
There's a good chance I'll be playing in a game, and I need help deciding on what kind of character to play. I don't know what the party make up is, but I know it wont matter much (no one really works together in the group I'll be playing in)
It's a homebrew game, but I know some things about it.
1) It's based off of castlevania
2) there's lots of traps
3) The DM loves using spell casters with very high DC's
4) There's probably going to be undead. At least vampires for sure.
5) DM also enjoys using incorporeals
6) The less reliance on spells I need, the better. DM enjoys blanketing areas in anti-magic fields and having the baddies enjoy high saves
7) There's tons of homebrew stuff the DM uses, along with lots of odd callings, so the tighter my build is the better
So, what to play?
I kind of want to play a Paladin, but a Barbarian could be fun too.
The stats I have to work with are: 18, 15, 17, 12, 14, 16
We start at level 8
Core rule book, advanced race guide, ultimate equipment, advanced players guide, ultimate magic, ultimate combat is allowed.
Any multi-class builds as a bad idea. Can only multiclass two times (for a total of three different classes) and then boom xp penalty.

Champion of the Enlightened. Monk/paladin means you have some of the craziest saves in the game, as well as almost 0 reliance on spells. The only real problem in that is the class comes from Paths of the Prestige, which is a small Paizo-sanctioned book with 20 or so PrCs. They're pretty sweet, and if you can convince your GM to have it then it's pretty perfect for what you want.
Other than that, Perhaps playing a normal Paladin would be good.

Ok casters with nasty saves, amazing stats? Incorporeals? BARBARIAN. go human, invulnerable rager, and take the superstitious rage power. With the human favored class bonus you will have phenomenal saves. The ghost rager rage power also let's you do full damage to incorporeals. If this campaign is expected to run past 12, take the east totem chain, come and get me, and seriously get spell sunder. Invest in a cloak of resistance, and perhaps take the trait for +1 will. When you can with your good reflex save I'd suggest a ring of evasion.
Str>Dex>Con>Wis>Int>Cha for stats.

Dealing with incorporeal/doesn't rely on magic...is a hard combination to pull off.
Barring the 'antimagic field' thing, I'd say Inquisitor. They do most of what you list quite well.
But without spells...I'd go with one of your listed Classes. Barbarian is better than Paladin. You can grab Superstition and Ghost Rager and handle most of that. Especially going the standard Spell Sunder/Beast Totem route as well.

An update
Apparently, a lot of things also has DR and SR
How are barbarians with breaking through DR?
Pretty solid. A +1 Furious Weapon gets through material DR, and gets better from there. You can also grab Oil of Bless Weapon for 50 gp a pop, and can use them at need. For early levels, a mix of materials are best...but you have the Str to carry them all.
And then there's the fact that you wind up doing do much raw damage that it powers through most DR.

Also if anyone has any build ideas to be a very defensive character that'll be fine too.

Well, my standard defensive Barbarian advice is as follows:
Go Half Orc. Take the Sacred Tattoo Alternate Racial Trait, and probably Shaman's Apprentice (to sleep in your armor), and the Fate's Favored Trait (+2 total to all Saves is shiny). Go Invulnerable Rager Barbarian. Use your 1st level Favored Class point in HP, and then grab superstition at 2nd and spend all your Favored Class bonuses on the human option. Take the Spell Sunder and Beast Totem Rage power lines (plus Strength surge, and in this case Ghost Rager). Beast Totem's actually a solid AC booster. Grab a Jingasa of the Fortunate Soldier early (+2 AC with Fate's Favored, and negates a crit per day...all for 5k).
At some point early on take Raging Vitality (because it's good), and consider Heavy Armor Proficiency to wear Mithral Full Plate eventually.
The big health is basically covered by being a Barbarian...

If you want a good Defensive style Character roll with a Paladin.
Human Paladin using a Long-sword or Scimitar and a Heavy Steel shield. Use a long sword if your only going up to level 13. If your going into higher levels your going to start your critical feats and a scimitar will be the better weapon.
Traits: Dangerously Curious- Adds UMD to your Class skills...(Take it for wands of Mirror Image and other Arcane Buff spells. Wands can go a LONG way.)
Feats:
Human- Fey Fondling
1-Power attack
3-Furious Focus (Extra Lay on Hands)
5-Extra Lay on Hands (Furious Focus)
7-Vital strike
9-Critical Focus
11-Improved Vital strike
13-Staggering Critical
15-Greater Vital Strike
17-Stunning Critical
Basically buy your gear appropriately with stacking Buffs and get your AC up around 40. Make sure to buy potions and wands of spells like Mirror Image, Blur, Displacement.
The Goal is to hopefully have them come to you but if you need to move you can vital strike your way across the field, Keeping your Defenses up. If you get hit you have Lay on Hands as a swift action. You have a bonded weapon so you don't have to sink every penny into a weapon. You could get buy with a moderate weapon that you Bond up.
Buy smart and you can have a character with stupid good saves, good defense, Lots of HP, and does solid damage the entire way through. He is a good mix. The bad part about the build is the same problem with melee builds...Handling ranged and then eventually handle flying. Potions/wands/scrolls of Fly are pretty good. A cheap paladin weapon that comes to Mind is Flame-tongue which gives you a scorching ray attack that can help out in those few ranged situations.

Reading over your game, I can't help but think you could roll one tex mex sexy Alchemist. It deals with most of your problems, and is great for the flavor of your game. But if you're looking for Barbarian advice, might I suggest looking here?
