I had a local player say to me. I hate GMing for you because you being at the table removes the threat of danger from the players, but I love playing with you because I know my characters are safe. Weird duality. Now I generally try to avoid winning fights in my first round, but at the same time I do not want me or the other PCs to die.
As a GM I want to make the game entertaining. If someone takes control and uses sunder to make it boring for everyone else then I will adjust for that tactic. I like the idea of hiding the spell pouch. In the grey areas for setting up an encounter as a DM you can make certain tactics for PCs more difficult.

Player: I sunder his spell component pouch!
GM: You don't see a spell pouchPlayer: Wait what? How is he casting his spells then?
GM: hmmm maybe he put it some where you could not see it but still use it?
Player: Fine, I sunder his robes!
GM: Ok you see a spellcaster just wearing his skivvies, but no spell component pouch
Player: Argh!! I sunder his skivvies!
GM: Ok you have a naked Wizard, hey look there is a symbol of death on his chest, you fell into his evil plan! MUHAHAHAHAHAHA

Heh. Now I want to play a wizard with eschew materials, but with a spell pouch. I don't need to use the material components, but I do anyway so that the enemy will waste actions sundering my spell pouch...
My druid has one put on him in critter form (he doesn't need it because another one melded with his form)
Also one on the velociraptor (its a druid! get it!)

At least one of my sorcerers has a spell component pouch.
Then again, at least one of my sorcerers does NOT have eschew materials, although that is a different sorcerer.
