The jailer is aware of any wearer of a linked prisoner's ring like a constant status spell. Additionally, all wearers of linked prisoner's rings count as familiar to the jailer for purposes of spells such as scrying and teleport.
I just wanted to verify that you can't remove a prisoner's dungeon ring by chopping off your finger. Would that be correct?

Because it's probably a home game, it depends. Doesn't seem to be a clear answer.
If it were me, you could, but you are going to be out a finger, so it might give penalties (to using that hand, some people might be disturbed by the missing finger, and if you ever run into the guy that jailed you assuming you escaped and got the ring off, he's probably not going to be happy.) My reasoning is because the prisoner's ring is pretty cheap at 250g, there's no teleport or any similar effects that would make the ring go to another finger on the "prisoner." And the requirements to make said ring involve the spell scrying and status.
Or alternatively, the finger would still be linked to you, so it would be considered "worn" even though you could be 500 miles or more away from your finger. It might rot eventually...
Not really a RAW or RAI, it seems like it's ultimately up to GM Fiat.

Necro i know but i was just about to use these rings in my campaign and came across this. anyway i remember something back from 3.x days where a ring that could only be removed by a remove curse spell and the such, that trying to remove the body part failed as well, it was described as you failing to bring yourself to do it, or if another person tried they somehow always got the wrong finger, or the ring would just appear on another finger (or toe if out of fingers)

I actually really like this idea. Not sure for this particular ring, but I like the idea for other cursed rings.
The wearer of the jailer's ring should definitely get alerted as soon as someone tried to remove their finger, due to the status effect.
I don't see anything or any reason why the iron prisoner's dungeon rings shouldn't allow their wearers to chew or chop off a finger if they're willing to do so. I suppose sadistic jailers could pay extra for a ring or stud variation that fits on other, harder to lose, body parts... like the tongue, for instance. Someone forcefully choosing to bite their own tongue off is probably a very desperate person.
