I would really love a way to do this. Channel both types of energy. Is there a feat or another way that overcomes this once you choose positive or negative.
I'd really like to play a PC that uses channeling to the max. As much as I'd like your suggestions I like building my own guy but am just curious about using both types of energies.

Versatile Channeler
You can choose to channel positive and negative energy.
Prerequisites: Channel energy class feature, necromancer
or neutrally aligned cleric (see below).
Benefit: You may make a choice whenever you use your
channel energy class feature.
If you normally channel positive energy, you may
choose to channel negative energy as if your effective
cleric level were 2 levels lower than normal.
If you normally channel negative energy, you may
choose to channel positive energy as if your effective
cleric level were 2 levels lower than normal.
Having this feat means you qualify for feats and abilities
that have “channel positive energy” or “channel negative
energy” as a prerequisite (for example, you qualify for the
Command Undead feat and the Turn Undead feat).
Note: This feat only applies to necromancers, neutral
clerics who worship neutral deities, or neutral clerics who
do not worship a deity—characters who have the channel
energy class ability and have to make a choice to channel
positive or negative energy at 1st level. Clerics whose
alignment or deity makes this choice for them cannot
select this feat.

Versatile Channeler feat is what you need. I'd suggest going with negative energy first, then picking up positive energy later. Later you can pick up Undead Master for extra minions.

This is one often forgotten little piece of the Core Rule book.
The Most Important Rule
The rules in this book are here to help you breathe life into your characters and the world they explore. While they are designed to make your game easy and exciting, you might find that some of them do not suit the style of play that your gaming group enjoys. Remember that these rules are yours. You can change them to fit your needs. Most Game Masters have a number of “house rules” that they use in their games. The Game Master and players should always discuss any rules changes to make sure that everyone understands how the game will be played. Although the Game Master is the final arbiter of the rules, the Pathfinder RPG is a shared experience, and all of the players should contribute their thoughts when the rules are in doubt.

So Gjorbjond is indeed correct. By the rules as they are written, an oracle of life cannot take the Vercatile channeler feat.
If you are playing in the Pathfinder Society Organized Play campaign, you stick to the rules.
However, if you are playing in a home game, the GM is free to make the game his/her own. In a home game, the GM is the final arbiter of the rules….he can decide to change things to fit his campaign.
I can give you this example. I have a character in PFS, a Dhampire Oracle of Life with the haunted curse, who is a priest of Pharasma. I wanted to take versatile channeler, but I cannot take it for this character. He is now 3rd level.
Now I have the same character in a home game where we are playing through the Carrion Crown adventure path, The haunting of Harrow Stone.
After explaining my character concept, using positive and negative energy in a ying and yang fassion, in order to fully understand life, you must also understand death. Pharasma is a goodess of birth fate and the judge of the dead. The GM is letting me take the versatile channeler feat. I also decided for role playing reasons, to take a level of cleric for my third level. I did this to represent my character getting re accepted into the priesthood of Pharasma.
I read somewhere on the FAQ boards that S. K. R. ruled that channel energy doesn’t stack.
The GM, and the rest of the players at the table decided that this was inconsistent with the rest of the game, Ie the class features Uncanny Dodge stack, as well as Evasion, so the GM is allowing the Channel energy to stack. So my character channel’s energy as a 3rd level character.
Now this is in a home game. In a home game the GM is free to and expected to shape the game to his/her tastes.
In a PFS organized play game you stick to the rules.

Versatile Channeler is indeed limiting in who can use it, the reason being it is pretty unique and almost powerful to be able to do both (even if the second is 2 levels lower than the first kind).
A suggestion for a character concept using channeling to the max - the Holy Vindicator prestige class. Adds modifications to your channeling ability, but is most useful for characters that can channel negative energy due to the descriptions of the class effects.
I have seriously considered a concept like this one. A cleric/holy vindicator of life/creation and death/destruction.
