Mount spell

If a large spell caster cast the mount spell would the mount be the appropriate to the spell cast size(huge mount) or would it be medium or small size?

Nothing says the mount spell scales for large casters.

Which makes my small character on the always-large Phantom Steed look kinda funny.

It would be a light horse or a pony, unless the caster researched or found a variation of the spell.
