The sample lich from Undead Revisited is a "Female old human lich cleric of Orcus 11" so I would assume that the intent is that age modifiers (both physical and mental) already in place before becoming a lich stay but I doubt that new ones (neither physical nor mental) are applied no matter how long the lich exists.
