This spell functions as giant form I except that it also allows you to assume the form of any Huge creature of the giant type. You gain the following abilities: a +8 size bonus to Strength, a –2 penalty to Dexterity, a +6 size bonus to Constitution, a +6 natural armor bonus, low-light vision, and a +10 foot enhancement bonus to your speed. If the form you assume has any of the following abilities, you gain the listed ability: swim 60 feet, darkvision 60 feet, rend (2d8 damage), regeneration 5, rock catching, and rock throwing (range 120 feet, 2d10 damage). If the creature has immunity or resistance to one element, you gain that immunity or resistance. If the creature has vulnerability to an element, you gain that vulnerability.
I was wondering can you use Giant Form II to turn into a Fire Giant with the Giant Template applied? That way it would be huge and not just sized large?
It says any huge creature of giant type.

I'm not sure, but I think giants do not get up to the next size category by monster advancement (normally), which means there are no huge Fire Giants. Which means, as stated on the PFSRD, the only forms Giant Form II grants are the Cloud Giant and Storm Giant in the core rules.

Giant Creature (+1)
Creatures with the giant template are larger and stronger than their normal-sized kin. This template cannot be applied to creatures that are Colossal.Quick Rules: +2 to all rolls based on Str or Con, +2 hp/HD, –1 penalty on all rolls based on Dex.
Rebuild Rules: Size increase by one category; AC increase natural armor by +3; Attacks increase dice rolled by 1 step; Ability Scores +4 size bonus to Str and Con, –2 Dex.
You can add the simple template to any creature that is not Colossal. Therefore there exists Huge Fire giants. They may be rare but by RAW they can exist.

Sure there is a possibility of them existing. But usually you can't assume the form of templated creatures, only the base creature.
Edit: Actually, its not "usually", its "never" assume the form of templated creatures.
Unless otherwise noted, polymorph spells cannot be used to change into specific individuals. Although many of the fine details can be controlled, your appearance is always that of a generic member of that creature's type. Polymorph spells cannot be used to assume the form of a creature with a template or an advanced version of a creature.
You always use the normal stats for an average member of that race.

Nope, not quite correct. You use your stats and apply what the spell says. For the creature type, it is mostly just the look and any of the following abilities that the giant-typed creature may have:

If the creature has immunity or resistance to one element, you gain that immunity or resistance. If the creature has vulnerability to an element, you gain that vulnerability.
So, honestly, the giant template would only add the size increase, since the spell specifies exactly what stat changes it makes to your character. While this is not allowed per RAW, I would see no real problems is allowing it per house rule.

With all of the other benefits being given and the specific no-templates rule, I'd say no.
Other reason is more damage for a monk.
A ring of wishes you can give you a wish so you can cast Giant Form II which will increase your damage dice two steps. then have your parties ranger cast strong jaw and it jumps another 2 then top it off with a monks robes and that is a total of 5 size increaments for the monks attacks!
