I have been familiarizing myself with the Summoner rules, and came up with the idea for a character's eidolon to start out looking like a Moa, but eventually turn into a Large bird-creature swinging electrical attacks all about while I ride it.
But, as it turns out, there does not seem to be a way to build such an eidolon. Could anyone please prove me wrong?

Evolutions: Flight, Large, Mount, and depends on what you mean by swinging.
Do you mean its attcks deal electric damage? Energy attack (electric)
And do you want Pounce? Quadraped
Serpent? Senpentine

I was thinking just take the quadruped base form, because I don't want to waste evolution points making the eidolon move/fly faster. Oh, and I know how to get it elemental stuff, I got that, I just don't know how I could make something with 1 pair of legs, and 1 pair of wings.
Ask your GM if you can replace 1 pair of legs off a quadruped base form with one other appropriate 1-point evolution, or just take quadruped, and model it like a Moa. Tell your GM it's a modelling/appearance choice, and that you'll keep the stats the same.

Limbs are a 2-point evolution, but I could probably try to convince a GM to let me replace it with a 1-point evolution. Claws?
