I've got a couple friends that are constructing some iconic locations from Kingmaker in Minecraft, and it got me wondering about other awesome areas to build...
Which sites from any modules, APs, society scenarios, etc., would be the most awesome to display in blocky glory? I'm thinking Serpent's Skull is going to have some really amazing ruins to build.

If you have a good shoreline to work with, the towering, angry-looking statue of Runelord Alaznist could be very nice.
The Pit of Gormuz. Especially if Minecraft does eventually implement giant-sized monsters for the regular world.
Or if you have a place that you're stripmining into ruin and leaving spawn points for all sorts of hell, the Worldwound.
You could easily do a softer version of the Worldwound, stripmind a place into badlands, and then build a fortified wall to separate monster-infested land from whatever player-safe territory you have, as a sort of miniature Lastwall and Hold of Belkzen.
Scarwall in its caldera island.
Castle Korvosa atop its pyramid.
Manipulating lighting and plant grown can easily generate an Orvian vault.
Along the lines of the Pit of Gormuz, the Mobahd Leigh stairwell should be possible.
The whole of Smuggler's Shiv or Saventh-Yhi could make for amazing locales, but you'd need the right tileset for it.

Sandpoint is somethin I'm planning on eventually building - actual size. Naturally the catacombs will also be there. I'll even keep them dark for monster spawning purposes.
I second Castle Korvosa, since it is immediately reconizable and the lower pyramid shape is something you can easily simulate in all its blocky grandiousity. Minecraft just doesn't do circles or ovoids very well, so stuff either has to have a lot of corners, be blocky or just built on such a massive autistic scale that those blocks become pixels.

I've got a pit of Gormuz-esque project going, in that I'm digging a big damn hole. And the Worldwound is an amazing idea! A swathe of blighted wasteland is just what the upper world needs!
How about locations that already have maps, like dungeons and such? I've got one friend building Vordakai's tomb and another building the Stag Lord's fort... I imagine there are much more exciting dungeons to recreate though. Having them mapped out already is ever-so handy when converting to Minecraft...

To me the jungle (don't remember it's name) would be the most interesting to explore in Minecraft :)
I would say Riddleport is a must simply because of the Arch!

For massive projects, if you play multiplayer, you might check out WorldEdit. It's a bit like cheating if you feel resource gathering is a vital part of building "the right way", but if you think the fun thing is designing and getting the buildings up, it's really neat. Also, the Bukkit server program now has support for CraftBook, a mod that adds a LOT of mechanical contraptions such as drawbridges, gates, and circuitry that might be useful in creating traps and the like from Golarion. For example, you could easily make the well in the catacomb of wrath spawn a zombie or skeleton if you stand in it (representing the "lose blood" thingy).
I'm not that into Golarion though, so can't give any suggestions on specific locations.

The survival game is the main game ATM, it can be bought from minecraft.net (or is it .org?) for 15 euro IIRC. It's in beta stage. The game should really be played multiplayer, FAR more fun than single player.
EDIT: Oh, and there IS support for giant creatures in minecraft, though only zombies. I don't know how to get them to spawn, but you might want to research that:

To buy it, you register on the site, and then you pay 15 euro via paypal or w/e. There's also a free version called "creative" which has far less options though - basically, instead of being put into the World of Lego RPG, you're handed a big box of Lego. Fun, but they can't even be compared.
When you've registered and paid, you can download it an (i think) infinite amount of times. It works on most systems, windows/mac/linux. Though I've personally never used it on a Mac, I've used it on a dozen Windows systems and Ubuntu without any major issues. Getting it to work on Ubuntu required a tutorial for me, as I'm not good with linux, but it works now and wasn't any major problems.
It's easily the most price-worthy game I've ever bought.

Gah, got it, installed it ... and now my friends are laughing their asses off at me as I went strait underground and started building a cavern-fortress ... and those BEDAMNED GREEN THINGS wandered in, went 'kah-derp' and now I'm digging craters in the shoreline to create enough sandstone to rebuild.... gah.
