I'd like to give an eidolon an evolution to make him incorporeal and was wondering what would be the recommendations for point value, minimum level, etc to keep it balanced?

It's a game-changing defensive boost, the same way Spell resistance and fast healing are, so it'd be a 4 point evolution.

Remember too, that incorporeal things can't hurt non-incorporeal targets without magic weapons, and then only for half unless they have ghost touch. I would say that to be able to move into and out of incorporeality at will would be at least as much of an addition as becoming huge on top of large is, so 10 points.

Considering there are only 2 ways for a pc to become incorporeal ( Shadow Projection and a racial feature of the undead heritage), I would say it wouldn't be a good balancing point for an eidolon to have.

And as Bobson said, your eidolon wouldn't be able to effect anything non-incorporeal without ghost touch weapons.

It might be REALLY hard to keep that balanced, if you've figured out a way for the eidolon to still deal damage to bad guys, but somehow immune to receiving any.

What is the flavor you're going for? If you just want it for the bonuses, I don't think you should do it at all. If you want some ghostly eidolon or whatever, wouldn't it be possible to get that flavor with something similar to a Gaseous Form ability? It would be far easier to balance.
