What would Rolth do? (Possible spoilers)

Okay, so I let my party rush into the temple at the end of Pathfinder #8. They were doing okay, but didn't realize I wanted them to run, when Andaisin reached out and touch o' deathed the party's 5th level paladin. She rolled high, and the party abandoned the body.

I've got other things planned in terms of fall-out, but I'm thinking Rolth brings back the pally as some sort of undead monstrosity. Ideas of how/what/when the character should make his surprising return?

I used Rolth as a villain for an interlude adventure between Seven Days and Escape from Old Korvosa. Essentially after getting away from the party in the Temple of Urgathoa he staged a break-out at the Citadel (springing Jolistina, Gaedren Lamm and Venkaskerkin). He transformed Lamm and Venkaskerkin into undead (Lamm willingly underwent Ghoulification, Venkaskerkin was unwillingly turned into a bloody skeletal champion).

The PCs went a-looking for Rolth, in an investigation throughout the city, finding yet another of Rolth's many hidey holes (guarded by flesh golem made of Derro and Cabbagehead). He was modifying zombies to explode in fire and plaguey bits to keep the plague going as long as possible and hopefully refine a plague strain that would raise the victims as horrible zombies.

This all came to a head when during the ceremony celebrating the PCs finding the cure for the plague, Rolth his newly undead "Declaimers" (my PCs called their group the "Proclaimers") and a horde of explosive zombies gave me the time to turn Old Korvosa into a hellish wasteland.

Having Rolth show up with a horribly undead paladin (I'd recommend skeletal champion or ghoul) would definitely tick the PCs off enough to make for a climatic encounter.

I think what I'm missing are the rules on how to adjust the character's stats/abilities in making the paladin into a skeleton champion and/or ghoul. I've searched through the SRD and come up with applying the undead sub-type, but haven't located anything more than that.

Just deduct 10 (or 11 to get an even number) from the listed stats, and you have the ability adjustments you're looking for. Personally I'd go with a wight for the paladin, preferably a cairn wight.

You needn't change his ability scores (outside of removing con and using cha mod for hit points) swap smite evil for smite good and call it done.

Are you using Pathfinder rules or 3.5?
An undead Fallen Paladin/Blackguard would be nice. The only problem is that he wouldn't meet the prerequisites. You might try an Anti-Paladin, though.
