My favorite cryptid is the [url=http://en.wikipedia.org/wiki/Mngwa] Mngwa.
If I were gonna convert it to D&D, I'd use tiger stats, but give it supernatural stealth abilities, above animal intelligence and maybe one or two other freaky magical abilities, like spider-climb.
Or they could be humanoid shapeshifters, and the reason nobody can track them is because they live amongst people, and mislead the hunters. Heck, an old New Mutants secondary character, Catspaw, could even be a Mngwa!
