Slimes, molds and fungi

Slimes molds and fungi are listed as an environmental hazard in PF Core (page 416). Are they considered to have HP, and AC?

Specifically, the shrieker has no stats... how do you shut it up? The Bestiary lists the violet fungus as similar to a shrieker, but with attacks. Do I use the stats for it, minus the attacks and movement?
