I'm not really intimately familiar with the Playstation scene, other than having beaten the Killzone games on my brother's machines, and I didn't get my PS3 until after the system's heyday. So, I'm not aware of a lot of the stuff out there that I might enjoy.
What I like best are open world adventure or RPG games, fantasy RPG games, fantasy action games, zombies, and military shooters. What I don't like is multiplayer. I only play single player.
Currently, I have the following for PS3:
Call of Duty Modern Warfare 1,2, and 3, Ghosts, and Black Ops (Already considering getting the rest of the Call of Duty games. Always did like their single player.)
Red Dead Redemption and Undead Nightmare (Might well be my favorite.)
God of War trilogy
Assassin's Creed Ezio's Trilogy
To help find games I'd like, here's some PC games I own or have played and particularly like:

Skyrim, Oblivion, and Morrowind (I wouldn't get something like Elder Scrolls on a console, though. Mods are what makes the series fun.)

Well, there's Last of Us.
If you liked Tomb Raider, the Uncharted series.
It's very different than you list, but Heavy Rain is compelling. Less 'game' and more interactive movie though.
Binary Domain was fun.
If you didn't play them on PS2 originally, the Kingdom Hearts remasters.
Most of my other recommendations would be Japanese RPGs. The Final Fantasy XIII series, the Final Fantasy X + X2 Remasters, The Tales series, Star Ocean Last Order. Xenogears is on the virtual console.
Remember that all PS3s will play PS1 games, but only the original fat bodies will play PS2 games.

I've never really played JRPGs much, but I was thinking of giving Final Fantasy a shot for the magitek. Which one would I be best of getting?
I'll look into Kingdom Hearts. I am a gigantic Disney fan, after all. Any other JRPGs besides Ni No Kuni and the pther ones listed I might want to consider if JRPGs are relatively new to me? Anything similar to Valkyria Chronicles? I played the PC port of that and loved it.
Not sure on South Park. I used to love the show, but I eventually stopped finding it funny.
Definately putting Uncharted and Infamous on my Christmas list. I'm very leary about Last of Us.
My PS3 is a slim, so no PS2 games.

The Tales series and Star Ocean have a combat system reminiscent of beat-em-up or fighting games.

The specifics are different between the various games, but they're all similar.
FFXIII-2 is probably the best of the generation, but it won't make much sense without having played XIII. The battle system in the three games is different then most other FF games though.
FFIX is probably my favorite PS1 FF, and I'm fairly sure it's on the store.

Well, you have many of the games that are good for the PS3 on PC already.
Someone suggested the Uncharted series, it looks like you like games in that arena.
If you are going to get Final Fantasy games I'd get Final Fantasy X on the PS3, and the PS1 Final Fantasy Anthology and Final Fantasy Chronicles along with Chrono Cross.
I'm surprised you don't have alpha protocol...I'd also pick that one up for the PS3 if you don't have it for the PC already.
Not certain if you'd like it, as they are sort of like Diablo, but Marvel Ultimate Alliance and Marvel Ultimate Alliance 2 are decent games.

I had the impression that you can't really play it with a combat dominant playstyle, because it's more a survival game, and the only time I've seen a non-combat companion who needs protecting work is Bioshock Infinite. Normally, it ruins the game.

If you are going to give Final Fantasy a shot, any of the PS1 options are good, but I would say Final Fantasy Tactics is the best, follows by 7 and 6. Otherwise, you can get the PS3 release of X/X-2. I didn't care for X-2 that much, but X was fantastic.
I went and bought Final Fantasy X/X-2, and ended up just not having any fun. I returned it and got Kingdom Hearts 1.5, and am enjoying it quite a bit.

GTAV is awesome and I played it on PS3, but if your PC can handle it I believes there's slightly more content in the PS4/XBone/PC version.
My PC can't handle it. I'm asking for a PS3 copy for Christmas.
Also, Watchdogs.
Played on PC. Wasn't bad, but wasn't great, either.
Also also, Sleeping Dogs and its DLC.
I have heard good things, and Hong Kong sounds interesting for an open world game. Might want more of the city whenever I finish Shadowrun Hong Kong.
Plus if you weren't including it in Saints Row IV, Gat Out of Hell. Worth it just for the musical number.
I will get this eventually, but probably for PC so I can port over my save from IV.

As it stands, the next game I'm buying is Infamous 1, 2, and DLC collection, followed by Kingdom Hearts 2.5 (since I like 1.5 a lot so far). My Christmas list has the Uncharted games, Arkham Origins, Black Ops II, Farcry 4, and GTA V. I am looking into interesting sounding games in this thread to add to my Christmas list.

Ammo isn't that rare after a while. It's kinda like playing Resident Evil 4 or something. You can't WASTE ammo, but if you're a good shot and know when to sneak past an enemy you don't have to engage (or kill him in one shot), you'll do fine. I killed every enemy in the game with ammo to spare, besides Clickers.
Ellie is undetectable by enemies so you don't need to worry about that. She's basically Elizabeth (hides around corners, occasionally scrounges up good items) except she'll shoot people sometimes too.
Basically, it's not what you thought (which seems to be that it was a pure survival horror game that also doubles as an extended escort mission).
Sleeping Dogs is one of my favorite underrated games.

The problems that I have heard is that is is an action-rpg instead of something like Residant Evil with a dash of rpg. Your stats determine how good your guns are for example so people kept going off on how they were weak.
Good voice acting, and settings and great characters.

It's basically like Mass Effect, but in a modern setting instead of a Futuristic setting. Instead of playing Future Spectre Jedi ops...you play james bond/Bourne Legacy type in spy wars.
It wasn't quite as polished as Mass Effect (made by the brothers of Bioware...or Obsidian, same guys that made NWN 2 and SW:KotoR II), but if you like Mass Effect one should like Alpha Protocol. I like AP a lot to tell the truth and find it a very unappreciated gem...but opinions vary.
In some ways the story is WAAAAY over the top in stereotypes and cheesiness, but when you look at it like that, it's acceptable.

Sorry you didn't like FFX. What didn't you care for? Was it the combat or story?

Final Fantasy X starts off really, really slow, and a lot of the really cheesy stuff is shoved at you up front, so I can see why.
I think that'd be it, then. I found it slow, uninspired, and not really captivating at all.
After some more time with Kingdom Hearts, I must proclaim myself a convert to the series. It's definately the JRPG I should have started out with in the first place.
Dark Souls is probably too brutal for my tastes.

I don't even need plot that much. I can explore the world of Nightmare Before Christmas (Best Disney movie ever) with Donald and Goofy in tow, team up with Tarzan, slip down the rabbit hole, summon Simba to assist me in battle, and fight Disney Hades in all his hammy glory. The plot can be as nonsensical and convoluted as can be, I'm still having fun.
