My additional question was If a creature is pinned and denied his dex bonus completely does he lose his ability to make a reflex save OR does his simply take a huge penalty?

The creature makes the Reflex with the described penalties.

If this is the Rules Questions forum we normally deal in RAW.
This means that the rules in this case do not support attacking the armor. Which means it cannot be done.

I have a couple players in my group like you kmal2t. I am unsure why your GM gets baffled. When I GM I like players to come up with unexpected stuff. I don't design my encounters to encompass what players "might" do. I only concern myself with what my villains and my other NPC's "WILL" do. Everything works out fine.

4: The wording of some things are just not clear.

I sometimes get bogged down a bit in a rules clarification looking for wording. Do I expect a FAQ, reprint or update for every word or game term in the rules? Obviously not.
