Would Alchemists be ok? They are higher level casters, but they don't actually cast, they mostly make concoctions and potions, which seem to fit much better. Also, if you do allow them, do you allow them to count as casters for item creation feats?

I was thinking of playing a knight of Rohan (possibly a paladin archetype). Since the paladin is lite on the divine magic and their abilities could literally be played off as being one of those 'larger than life' heroes like Aragorn was. (I also wasn't going to take any spells that weren't self-only, no obvious magical effects like giving me a halo or angel wings)

Marwood of Gondor is the grandson of the sister of one of the prior Stewards of Gondor, though he knows it not; records of his bloodline was lost when Minas Tirith was ravaged during the war. His father fought and survived the battle at the black gate, and told him many stories about the horrible things witnessed that day. His father is still surprised he survived to this very day.
Marwood was sent away from home to learn the ways of armored combat. Inheriting his father's grim demeanor, and while he became an excellent knight of Gondor, he feels strangely out of place in a world where evil had already been destroyed.
Still, there were pockets of monstrous things to be found and cut down. That would have to do for him.

I was out of town for a few days and had a temperamental laptop that didn't allow me to use HL properly.
