homebrewing off of the AP; Legacy of Awesome, or Fiery Catastrophe?

Im the kind of DM who takes prewritten adventures and setting packets that authors labor so hard on, and butcher and frankenstein my own worlds for adventuring. This time around my eyes are set on the Legacy of Fire adventure path.
I have the first book of the path and have an idea of where the story is going from the background and adventure outlines. I have to say it is well thought up, but for my setting i would be turning the plot head over heels. So i am looking for insightful perspectives, preferably those who have played/ran the adventure path full through (id hate to have the story break at higher levels, where i am less confident in running/writing for).
Things i want to change to the plot;
1. Turn the templars of the five winds from ginies to litch, id rath undead over outsider
2. Turn Nefeshti into the BBEBG (turning the templars into bbg if they arnt already)
3. Making the goal of the party to become the firebleeder in the name of the good god of the setting, to smite the undead (keeping Jhavhul as a competitor, striving for the same goal)
4.this is my first adventure path so excuse my ignorance, but how relevant will the NPCs out this first book be? And what if i played around with their motives and the like? Would that drive the story drastically off?

the plot it's self would feel a bit more like a Nex/Geb conflict with a redirected focus on divine magic then arcane. The PCs would get a first taste of the litches, wail still trying to fend off the Carrion King. Then when the undead come in full force, its a race to rediscover the ancient ritual to become the Firebleeder, there by infused with divine energies, strong enough to defeat Nefeshti With added themes of treasure and gnoll hunting, as well as fighting against the unholy undead in the name of the setting god. I reolize that thier is alot to this list, and i know alot of answers are going to be "yes, with work". But i would like to know if im better off writting my own stuff or sticking with the rewritten path idea?

If you follow your plans, you'll basically be rewriting the adventure path from the ground up.

I guess my last question would be if the books are still worth picking up for what i wana do.
Will they be insightful refrance books for some of the main plot pits that i am ripping off of it?
Perhaps just the PDFs?
Or should i leave it all at home once we pass... the second book? Or does that one get too into the main plot as well?

Heck, the first book has a Templar of the Five Winds in it. For what you want, the actual AP is unnecessary and likely counterproductive. You really shouldn't even call it Legacy of Fire to avoid confusion.

It sounds like a potentially really fun game...but the actual AP is pretty much a completely unrelated thing.

I mean, you might be able to mine books 1, 2, and 6 for enemies, and even some (though only some) of Book 1 and 2 for plot...but that's probably it.

Because i have had similar plans with other APs as well.

Medium-adaptable. What you describe entirely changes the villains, plotline, and end goal of Legacy of Fire. It's only commonality is a setting and some names. You can adapt the APs somewhat, but none of them will really stretch quite that far.

The villains and plot can each be rearranged somewhat easily enough, but usually not changed entirely, and the end goal can sometimes be changed and sometimes not depending on the AP in question.

As a general rule, you should probably read through the AP and then change it if you feel the need, as you'll have a better idea of what changes will work and which are even necesary.
