The prepared casters choose to prepare the listed number of orisons/cantrips per day, and can cast them at-will. Spontaneous casters choose the listed number of orisons/cantrips as they gain them and can cast them at-will.

That's correct, all classes that get 0-level spells can cast them as many times as they want each day. The number per day you're given on the table is just so you know how many different Orisons you can have prepared (so a Wizard with 3 0-level spells per day could prepare up to 3 different 0-level spells, and cast each one as many times as he wants).
