When you say Viking, I think Viking.
Human
... Focused Study
... Heart of the Fey
Viking Fighter VMC Cavalier
... Order of the Cockatrice
1. Skill Focus Perception
1. Power Attack
1. Shield Focus
2. Hurtful
3. Challenge (VMC)
4. Unhindering Shield
5. Raging Vitality
6. Cornugon Smash
7. Dazzling Display (VMC)
8. Skill Focus Intimidate
8. Furious Focus
9. Chain Challenge
10. Lesser Beast Totem
11. Tactician/teamwork feat (VMC)
12. Beast Totem
13. Iron Will
14. Greater Beast Totem
Fearsome allows you to Intimidate a single opponent as a move action at level 2... obviously, you take Hurtful so you can hit them as swift action... then hit them again with your regular Power Attack. Unhindering Shield and the Viking's Shield Defense makes your mithral buckler baller AF. Raging Vitality keeps your angry @$$ alive. Cornugon Smash means you can use the Hurtful swift action extra attack on pretty much everyone you hit. Order of the Cockatrice's Dazzling Display is a standard action, not full, so that is nice, plus it's "free". At level 10, Fearsome allows you to Intimidate a single person as a swift action... doesn't help with Hurtful, but it's still a nice trick.
Then you get pounce.

I'm thinking Witchwolf Skinwalker as a Nature Fang Druid. Extra Feature nets you claws and a bite or a +2 to all saves. If you pick up a bite or claws from elsewhere, it's still real good. Druid gets you lots of utility. 4 skill points is fine, spells obviate the need for lots of skills. Take Druidic Herbalism for your pre-battle brews or bring a trusty battle bear or wolf into battle.

Is a wildshaper polymorpher my best bet?
When I hear viking, savage and versatile, I think of the Skald. If you want to move quickly around the battlefield, then there's the bladed dash spell.
Combine the two, so my Tigger build? Granted, you will probably want to adjust it for your game. But essentially Skald with +8 Str/Con & +4 Dex. The Wild Shape doesn't come online until level 6 though, and can be a Celestial Spellcasting Tiger(with Pounce) at 8 (if you rearrange the feats).
You could skip the wild shape stuff and it is still decent and versatile. Amplified Rage really helps.
