This is probably covered somewhere but I've failed to find it.
Question: what/where are the guidelines for online chronicles? For example: how do you create them so that they are "official" and recognized? I get that you can make your own from the PDF but is it that simple? Are there do's/do not's that I should be aware of?
This pertains mainly to Starfinder chronicles but any guidance would be appreciated.

Yes, it is that simple. The GM fills out the information. For 1e and SFS, they "sign" the document and gives it to player. 2e chronicles don't need a to be "signed" as the GMs name is no longer required.
There are no official guidelines, but there may be something in the works that I have not heard about.
By the guidelines for all 3 systems, the GM is to provide a "complete" chronicle. This has been taken by some to mean beginning and ending values for Gold, XP, Fame/Prestige and factions. The GM should also fill-out what purchases were made and items where sold back.

However you were filling out Chronicles in person, just do that online.
I've had GMs physically print out each Chronicle and scan them and email them, and I've had GMs fill out everything digitally and upload them to the cloud.
For Starfinder, all you need is:
Some players may also request a special note such as "Skittermander credit", or something to that effect.
