If you're up against undead, the Advanced Heal Domain power is king. 2 spell points for a spell at your highest spell level is simply worlds better than any other spell point power out there. The one catch I've found is that the other spellcasters run out of spells before you run out of channels if you do this. So probably works best in a martial-heavy party that uses magic primarily for healing.
For more general-purpose, I'd say the answer is weapon surge. It increases the potency of your weapon for your next attack. Now +1 to hit may not sound like much, but this is an untyped bonus, which means it actually stacks with stuff. Untyped bonuses are so incredibly rare in PF2 that they're automatically extremely valuable. And that pushes Weapon Surge to being one of the best powers out there. I can't wait for sorcerer dedication to come along so I can stack it with magical striker (which, honestly, I think will be just ludicrously OP). The one catch is that it can't push potency beyond +5, so once you have a +5 potency rune the ability goes from excellent to useless in an instant.

One of my favorites, though I haven't seen it in practice, is Destructive Cry from the Destruction Domain. It's a 1 action verbal cast for 1 spell point that you can do if your last action was a strike that hit. It just outright does damage equal to your level, no caveats, no defense. The power says you do "additional damage" rather than like I typed damage so I don't think it interacts with weakness, resistance, or buffs/debuffs as if it were a desperate hit. And damage equal to level might not sound too great but with MAP how it is any surefire damage boost is ace, and it really does scale pretty well especially considering the one action cost.

The healing domain advanced power is quite strong indeed vs undead. IMO though a bit too situational.
