Long story short. My party thought that a chest might be a Mimic, and took the standard precautionary actions, murder/destruction. Afterward the question was asked if they had put it to sleep, via the witch hex, would it automatically revert back to its native form?
Is this established somewhere? Or just left up to the DM?

GMs who have their mimics look like chests are being unimaginative (also, based the the "average size" listed in the Bestiary, either those chests are huge or the mimics are tiny).
How about a mimic taking the form of a bed? Or a chest of drawers? Or a cabinet? A wardrobe? Why not a wall-to-wall carpet? The bestiary description says that there are "legends" of some so large they take the form of houses or ships....
A GM hasn't adequately developed his mimic-fu until the party feels the urge to randomly destroy every piece of furniture they come across.
As to the OP, there's nothing in the bestiary that even indicates what it's native form might be.

... no, but seriously, Ciaran is correct.
That said, looking at their entry, it looks a little bit like a unique variant of the change shape effect, in which case they remain in that form "indefinitely" - which looks, to me, like even when asleep. But it's really up to the GM! :)

Best Mimic encounter ever? Rowboat Mimic sitting ever so invitingly on the shore of that underground lake. Good times.
As for what happens when they sleep...I'm with G-M
LOL, mine waited to "announce its presence" until well out over the lake and then said more or less "ante up or learn to swim".
