If a PC want to bind something wit 15+ HD or gate in something like a plantar or pit fiend would they not almost immediately be missed?
Is it cannot that theses guys are actually infinite in number?
What reasonable defenses against being bound be common enough to be considered standard? Not just spells but plans of action and so on.

The first defense is that there are not that many people with the power to bound you in the first place.
The second defense is that although 15+ HD outsiders are relatively rare they are still a lot more of them people that can bind them.
The 3rd defense is having a high will save.
There are other defenses, but they are more reactive in nature and therefor more iffy.

The Great Beyond is pretty frickin' Great. (Also, very Beyond.) It's entirely possible that there are more Planetars than there are human beings on Golarion. On the other hand, whichever deity or demideity holds that planetar's allegiance would likely know immediately that their services were being bound by a mortal.
It's also possible for the outsider to be willing to be bound if the mortal doing it meets certain criteria. For instance, planetars would be willing to serve a sufficiently powerful good wizard or cleric, or a neutral one if convinced that the purpose would further the goals of good.

In the Pathfinder Campaign Setting, the world of Golarion is only one of many which contain mortal life in the universe. Most outsiders come from mortal souls which have passed on. In addition, it can be presumed that the Pathfinder universe is nearly as old as ours.
So if you consider how many have lived and died in our own world's entire history, and multiply that by however many worlds support mortal life in the Golarion universe... yeah, there are a lot of outsiders of all types that come from souls. The ones who don't? Well, that is an interesting question.

When you mean HD, are you talking 1080p or 4k? SD just doesn't do it for me any more.

The flippant answer is zero. Zero outsiders actually exist. The number that exist in your game is whatever you want it to be. Outsiders, being entirely fictional, could be infinitely many or unique.
Personally I like my high HD creatures to be very rare. In my games there aren't more than 40 or 50 pit fiends and each one is a big deal. Bind one to your will and it's neighbors will notice. They might not have any sympathy for the guy bound, but they'll notice. Rival pit fiends aren't likely to take any action against you, they'll be too busy poaching the bound guy's turf. Make a habit of it and they may start thinking "Am I next?" and take steps against you.
Bind a good outsider and it's friends are likely to mount a rescue.

With the possible exception of protean lords and elementals, you can still use the notion that they've been missed by whoever they usually rule over/hang out with. It could also be fun to flip that notion on its head and have a powerful outsider of an opposing alignment show up to kill or capture the mage's slave. "For years I've waited for him to be cut off from his buddies in the Infernal Host! Now's my chance."
