The later map folios (at least from Skull and Shackles) are large regional or city maps... Normally 3 in a pack, 1 of which is a player friendly 'here be dragons / hand drawn' regional map... So, in my experience, they are more of a decorative / campaign supporting resource rather than something used constantly at the table...
For more practical use during encounters, there are PDF 'interactive' maps available Here
For what it is worth, the Hand Drawn maps in the folios from Shattered Star onwards are one of the best RPG resources that Paizo produce...

I've gotten a ton of use out of the "hand-drawn" player-friendly poster map of Varisia in my RotRL game, not to mention the city maps of Sandpoint and Magnimar.
The newer incarnations of the map folios can by useful. The older versions were player-unfriendly and basically just reprints of dungeon maps from the AP. I still wish they would put them in a pocketed binder instead of loose maps in a dust cover though.
