There is always something you would love to do, but the demands of life (family, friends, employment etc) always get in the way! What would you love to do, if you were able too?
Personally, I would love to travel some more, especially to France and Spain. May be take a boat around the Mediterranean. Also spending more time on my guitar would be nice.

I want to thru-hike the AT. The only thing holding me back is my dog. I love him dearly and I don't want to foist him on someone else for 6 months. I think he's too old and wouldn't do well if I took him with.
I also love sailing, but am too poor to own a boat. I need to take some courses, get some time under my belt and then find people who need crew to go places. There are people who do things like cross the Atlantic, but need help and will take you with if you pay for your own food.

If we're sticking with stuff that might actually be workable in real life, given enough time, I would have to say:
1. Spend time at every US National Park, maybe get a look at what this place looked like before all us people screwed it up.
2. Go to London and dig though some of the awesome second-hand book shops that I've heard are there (does 42 Charing Cross Road actually exist?).
3. Read the million-and-one strong backlog of books that I have to read (and getting longer every day).

Develop a green friendly, infinitely renewable energy source and then GIVE it to the world for free.
Translate the Temple of Elemental Evil totally into a PF format and then take the time to run the WHOLE thing.
Meet my intellectual, emotional counterpart and then marry them to live happily ever after. (Or something like that)
Biuld the perfect RPG that no one could ever find fault with or complain about game balance. After I did this I would then walk on water and raise the dead.

Ive got about 2 years before I get started on any of this...full time school + full time work = no free time lol
-Brew my own beer.
-Complete any of my ever increasing list of home improvements.
-Play through my steam library...I love steam sales and as a result I have a serious backlog lol.
-Learn a new language...most likly Tagalog (philipino).
-Travel to the UK.
-Write/publish a novel.
-Write/publish a PFRPG module.
