I like Dune because it had a lot of martial combat involved in it, books, movies, series and all.
Feyd's a skilled combatant, but he's also a cheat. He has no honor, and would take any means necessary to win.
Taking that into account, I'd say he is a fighter with the cad archetype, specializing in knives since those seem to be the weapons of choice in Dune. In which case, the knife master rogue would make a decent alternative.
A lot of grappling seemed to go on during his fight with Paul, so he definitely has a high Strength score. He probably dumped Wisdom though, as he is easily manipulated. Dexterity is probably on par with Strength, given his deftness with a blade. He is reasonably intelligent, but I don't believe it would stand out in comparison. Same for Constitution I guess. I can't really remember enough of Sting's portrayal to say anything of Charisma, but I'd also put it pretty low going by the books.

The Harkonen bloodline was heavily manipulated by the Bene Geserit - I'd assume a 5 pt higher build than the average person/adventurer. So if it was a standard AP, he'd be a 20pt rather than 15pt build.
I'd not say LOW wisdom, he wasn't foolish - he came up with some decent plots and assassination plans, he just wasnt a patch on his Uncle. I'd say 10-11 Wis.
Good Str (16?) decent Int (13 or 14 - enough to open the expertise feat chain) 10 wis, good dex 16, good con (he was an athelete and gladiator) say 14 and he had a certain manly beauty, charm and charisma that Baron Harkonen sought to utilise, so MAYBE 12-14 cha.
Build? Unarmed fighter would be a fine build for him - he used a dagger because that was the accepted weapon of the culture but also to poison it as well. A level of rogue with poison use and sneak attack also works.
