I've already done that with all my mage knight figures. I actually figured out that its pretty easy to separate large from small figures. And the great thing about large minis is that the base already fits as a large creature. With medium creatures you have to cut the base down, unless you don't mind the bases slopping over into other squares.

No, I went by the figure and the name of it. For example any of my troll figures became large. I really don't understand what you're asking. You already have the minis, use your judgement based on what they look like to decide whether you think they are medium or large creatures. Since they didn't have size categories in mageknight it's your judgement call. If you're going to buy mageknight figures and are looking for larger figures then I don't really know what to tell you, they used to have posters for each set, maybe you can find them online.
EDIT: okay you're looking to buy larger minis, Well other than the few dragons and specialty items (like the chariott) they didn't have many bigger than large size figures. When I typed in a google search for mage knight posters they came up, so try looking at them. The posters were pictured at size so you can see which ones are larger.

I only converted humanoids. I took them from the MK base and attached them to a standard base (available anywhere that sells minis). Depend on which base the mini fits to determine the size: if it fits a large base you can call it a large.
As mentioned if it leans over the base (i could rarely get base to base with a Solonavi) you can either call it good or go to the next base size.
EDIT: the bases they come on are all the same size, 2.0 will be bigger than 1.0 and the special pieces as mentioned.

also if you're looking at getting into paining minis, there's a set called mage knight artists set, these come unattached to their bases and unpainted. I got sealed packs of these at Gencon for $1.50 each, they make great early painting test minis.
Also some of the online store such as gaming ect give pictures of every figure even if they are not in stock
