So I thought this was a funny/kind of interesting idea for a prestige class. It's not at all done but I thought I'd share the general idea and what I have so far.

Saves: Good Fortitude
Prerequisites: Improved Grapple, Greater Grapple
Alignment: I'm thinking any non-lawful but it might have to be any evil because I don't know if cannibalism is an evil act or not, I think it depends on what the alignment of the person being eaten is but who knows.
Weapon and Armor Proficiencies: Gluttons gain medium armor proficiency.
Bite: at 1st level a Glutton gains a bite attack that deals 1d6 damage (1d4 if small) plus strength modifier and a half. In addition a Glutton can initiate or maintain a grapple with its bite attack.
Everlasting Hunger: Starting at 1st level when sitting down to eat a Glutton must make a Will Save (DC 25) or be compelled to eat until no food is left.
Big Boned: Starting at 1st level a Glutton starts to feel the weight it has gained. A Glutton takes a permanent -5ft penalty to all its speeds, and adds 1/2 its original weight to its weight. In addition it gains a +2 bonus on its CMD against bull rush and trip attempts and a +2 to its natural armor bonus.
Gape of the Serpent: At 2nd level a Glutton salivates acid adding 1d4 acid damage to his bite attack. He may swallow any enemy he has grappled with his bite attack up to his size category. An Escape Artist check or CMB check can be made to escape following the normal rules. A Glutton's stomach has 10AC and can be attacked with a light slashing or piercing weapon or burst with a DC25 strength check. While inside a Glutton’s stomach enemies take 1d4+con modifier acid damage each round. A Glutton’s stomach has 1/3 of the Gluttons total HP (rounded up) and can only hold 1 enemy of it's size category at once (I'll expand on this later because if you're medium you'll be able to hold 2 tiny creatures and stuff like that and so on).
Iron Gut: At second level a Glutton becomes immune to all ingested poisons.
Feed: At 3rd level every time an enemy dies inside a Glutton’s stomach he gains a growth point, a Glutton gains a bonus equal to his growth point total on attack rolls, CMB rolls, saving throws, and skill checks. His maximum HP increases by 5 for every growth point he gains. Gluttons may also eat a dead/dying body as a full-round action to gain a growth point. Growth points reset to 0 at the beginning of every day and a Glutton can only have a total number of growth points equal to his levels in the Glutton class.
EDIT: I'm thinking their final ability will pretty much be Powerful Build from 3.5, they can function as a creature 1 size category larger than they are but are still considered the same size (so their bite attack deal more damage, they could swallow large creatures, they'd have a better CMB/CMD, etc)

I honestly took most of it from a 3.5 template and some from the Barghest (however that's spelled) I'm really building it for an NPC that I'm working on (who is in fact an ex-Monk). I suppose I could just make him a Monster though and then have him take class levels and give him the equivalent of a Level Adjustment.
