I can't imagine them doing this. This would pigeonhole their ability to surprise their customers. It would also bore Courey to tears.
However, I think having more of them in the mix would lend to interesting varieties. I am thinking of Pathfinder Chronicles myself. I am sure a Mwangi backwater jungle Tavern would look leaps different than some Medieval tavern.
I don't see them doing tavern flip map #23, Dwarven taverns of the Underworld with the reverse side being Drow tavern of the Undercity.

Seems like if you want a bunch of inns, the Inns map pack is a better way to go. Three inns, with a little (though sadly not much) mix and match. Also works great with the city, town, etc. map packs.
And as a Maps Subscriber, I would definitely unsubscribe if it became "tavern extravaganza" (especially since if they were putting out taverns, they probably wouldn't have the resources to put out anything else). It's the diversity of the flip maps and map packs that come out that attracted me to subscribing.
And if you're really desperate for inns, they have many map packs usable for town scenes and two tavern flip maps (albeit one is out of print). Taverns are nice but I don't know what kind of game you're playing if that's all you'd want, and at the very rapid rate of once a month.
Now, if the waterfront tavern flip mat goes out of print, it'd be nice to have another tavern/inn flip map, but just the one will do. IMHO of course.
