I'm pretty sure it was in one of the Dragon magazines "Savage Tidings" articles, but I don't have them in front of me here @ work to verify.
If I were to make a religious Olman/Maztican PC though, I would think the Shaman class (from Complete Divine) to be more appropriate, but that's just a personal preference. There's certainly no reason you can't make a cleric.

I glanced thru what I have and I found no such information. There are plenty of references to the god of this or that, Tlaloc = god of water for example, but nothing more specific. The articles mention and seem to imply that the Olmans now worship totems instead of the deities. I'm not sure the implications of this for a pc who wants to play a cleric.

Was there ever any information posted/printed for characters who wanted to worship Olman deities

I believe some of the Olman deities were borrowed from the real-world Aztec pantheon whole cloth, which means you should be able to find some background on them in Wikipedia or a print encyclopedia or book about Mesoamerican religious traditions. The ones I recognize are Quetzalcoatl, Tlaloc, Tezcatlipoca, and Tlazolteotl. Wiki will probably give you enough info to come up with alignments, portfolios, domains, and a holy symbol.
IIRC, the old TSR publication Scarlet Brotherhood had a page or two of info on this topic. Unfortunately, it's too late to get it except through e-bay. I'll look at my PDF when I have time and see if I can extract some info for you.
Some of the deities also appeared in the 1e AD&D Deities and Demigods under the Aztec pantheon.

3.5 They were released during the path. Dragon 352, 354, 356, and 358 have the articles.

Interesting related note.
One of my characters took leadership as a bard phanaton. His cohort is his mate and a cleric. I am not too particular about using specific gods (knee-jerk to gaming-is-of-the-devil in the 80's). In "Gods, Demigods and Heroes" (i.e. pre-AD&D) the Bat God was mistakenly called "Tezcat" (short for Tezcatlipoca) instead of Zotz
