has anyone tried to compile a list of the Olman pantheon or know where I can find one? I've seen different gods mentioned here and there throughout the adventure path, but I have yet to see a nicely compiled list, which would be useful since I have a player that want to create PC zombie master, and I want to give him some info about Olman religion.

The Olman pantheon is taken directly from Aztec mythology, so websites like this one can be a good source of info and pictures. The 1st Edition Deities and Demigods has the original D&D presentation of these gods, and the Living Greyhawk deities zipped PDF has 3.5 info like domains and favored weapons. Erik's pdf sounds very helpful too; email sent!
In assembling the NPC Roster, I also noted which deities are named & where they appear. Unfortunately this idea didn't occur to me until halfway through, so this list may be incompete, but the ones I saw mentioned from the Olman pantheon are (in rough order of importance to the STAP):
Zotzilaha or Camazotz, god of bats and the night; the original Tamoachan module often calls him "Zotz" and has lots of other epithets for him, like "shadow-loving," "the undead god," and "vampire god of the underworld"
Quetzalcoatl, father of the firmament, giver of law, god of air and stars
Tlaloc, god of rain and fertility
Tezcatlipoca, god of the moon
Tonatiuh, god of the sun
Mictlantecuhti, or the Snake Father, god of death and undeath
