Why does it have to be all or nothing? If one of your player's asks if they can disarm an opponent add the disarming procedure, same with charging or bull rushing. Let your players lead you and use the rules to tell the story of their characters. I run a campaign using just the Basic Box, Bestiary and limited feats and options from the core rules just because that's all we need. Make the game into whatever's fun for you and your group. :D

Queen of the Spiders is a Huge adventure which pits you against various giants before heading underground to take on the Drow and then Lolth herself! It's a classic.
Ravenloft is the all-time fave vampire horror adventure. Everything you could want if you like Hammer horror films.
Tomb of Horrors, the infamous killer dungeon. Best used as a one-shot or dream sequence because you will die. Guaranteed.
Temple of Elemental Evil is a big ole megadungeon that you can take a whole campaign to wade through. Look out for the sleeping vampire, he isn't what he seems...
Isle of Dread. Explore a island filled with jungle, lost plateau and dinosaurs. Lots of pulp fiction action.
