I feel the need to ask, why is your mount being unable to speak a problem? What end goal are you trying to get to that requires a speaking Griffon?
Remember a ton of communication can still be done with yes no questions, which your griffon should be able to respond to with simple head shaking or nodding or clawing the ground a certain number of times.
These sorts of questions always make me smile. Lol.
It's a horse... in your case a Griffon... what meaningful conversations is your character missing out on by not being able to converse with their horse?
Maybe you can build a rapport with her? Possibly get to know her? Oh, you make her laugh? Now we have little half-Griffon abominations flying about...
There is always the Bonded Mind teamwork feat, if you are actually trying to gain any sort of strategic or tactical edge through communicating with your horse.
To explain, I worked with the gm to make the griffon tie into the plot, thus the griffon is another story important "npc".
To be honest this question came up after the prodding of the gm, but knowing him it's for a good story reason. Could be this will just give him a sort of "DMPC" but either way I trust him.
