So, you want to extract game design wisdoms about storytelling from Pathfinder books and show how they can be applied in a video game?
The GameMastery Guide might be your best bet. It is ripe with general game design hints, like "fun is the primary goal", "be careful with sensitive topics" or "reward your players properly and in an interesting way".
Pathfinder Second Edition also has such a book, but as a GM and game dev I found it less inspiring than the First Edition version. It has some interesting pages on encounter design, though.
Finally, there is a good third party book: The Kobold Guide to Game Design. It's a collection of essays with different topics, with "Crafting a Dastardly Plot" probably being the most interesting.
As long as you don't present the entire book(s) in your videos, it should be ok for Paizo. In doubt contact them, they seem to be quite openminded about finding new partners.

https://worldbuilding.stackexchange.com/You will have to dig for articles about story, though. A lot of people focus on mechanics or programming (you noticed that already), but the articles about crafting stories are still helpful.
I guess RPG Maker will mean less work for you than Unity. But maybe the latter rather strikes your fancy.

yes, i have breezed through the Gamemaster guide on a few occasions, and seriously read some of its chapters when i tried to GM my own game once (quite a disaster i might ad) and that showed me just what a wealth of information that book really could be.,and yes, since im not focusing on programing so much, i can use rpg maker, since im manly focusing on the character(s) ad their envirnment it will be easier to cocuse on that in the story.
and as i was saying too, their are other boks specifically helpful, such as the class guide, it asks ou to think about what the overall goal is for a new class, and to constantly consider whether the abilities it has access too fit the classes scope. same with the race guide, creating a new race, who are they? where did they come from? what are some of the conditions of liveing that (over a long peiod of time) lead to them develloping some of their atributes... this stuff s absolute gold!
and thats not even geting in to the ultimate comabt books which asks questions about combat, the ultimate magic book which asks about spells... it just goes on and on.
but es, i will definately look in to the book you sugest, sounds like it could be fun.
and once i get this series going, i will definately looking for experience GMs/ DMs to do short clips on some of their creative prosses as examples.
as basically, im alll about community. ANYTHING you do to improve community improves EVERY other aspect of a medium.
