Yes, unless they're at the gate and opening it. Since we're not in rounds do I have to roll again, or does the crit get me to the top? I do have the Very Sneaky feat, which (I believe) means that if I'm concealed at the start of my turn, become unconcealed (such as by peeking over the top) and then re-conceal, I remain unobserved.

With very sneaky you need to succeed at your stealth check to stay hidden.
As Deerslicer gets to the top of the palisade he sees that on the other side there is an open yard, with nowhere to hide. Also he notices the dungeon in stone and the tower with the top in wood where two orcs are looking at the palisade and the female one, pointing a finger at him.
She growls something in orc and Deerslicer is certain she has seen him and is ready to sound the alarm!

Miraculously, Deerslicer doesn't sound at all like he cares about food.

Deerslicer question is answered with a grunt from the orc woman who starts targeting the goblin with her bow while the other orc in the tower sounds the alarm.
As soon as the alarm is called, you start hearing several voices that Deerslicer think came from the right of the fortress.
Let go in round for now and roll initiative.
Simon can use stealth, Elendyr and Gamble perception, Deerslicer can use Deception or Perception, Leofric Perception
If someone roll more than 26, they can act.

Well, if given the option I'll go w/ Perception, but I feel like the action I was doing when initiative was triggered was a Deception roll of 8, so shouldn't that be my Initiative?

@Deerslicer In terms of rules, I will say yes, but IMO it's punishing the player for trying to do something fun and in character. I want to reward play, rather than roll ;-)

Since I've looked over the palisade, can I get a bit of a clearer view on the map of what's visible on the other side, and the position of the orcs coming our way?
Deerslicer goes to duck down, but the female Orc is quicker than him. He notes her gait and the bearing of how she holds her weapons.
Action 1: Hunt Prey. Monster Hunter: Free action to make Recall Knowledge on target. (Society for Orcs, I think.)
Society(Recall Knowledge) w/ Outwit bonus: 1d20 + 5 + 2 ⇒ (17) + 5 + 2 = 24
Unless orcs are considered really common (Untrained level), that probably isn't a crit, so no bonus to the next attack.
He ducks back behind the wall, hanging near the top above the gate with Gracie. He glances over at Simon, nodding emphatically, and cries out, "Me's been hit! Oooh, I'm faaaaallllliiing!"
Action 2: Take Cover. Action 3: Deception.
Deception: 1d20 + 1 ⇒ (12) + 1 = 13
Reminder: My AC (and Gracie's) is +1 vs. the female orc archer, in addition to the bonuses from the obstruction and cover.

Deerslicer recognize the creatures as orcs, he knows that orc can stay in combat even after suffering a deadly wound. they have a reaction that give them the ability to stay alive after getting to 0HP

Holding his bow loosely in one hand, the elf contemplates the gate for a moment, looking for possible weak points, before invoking arcane power. A blob of flame flies from his free hand at the barrier!

From his previous observations, Elendyr knows that destroying the fortification will take quite a lot of time and certainly they will need to coat the gate with some flaming substance Hardness 10, 40HP.

Leofric brandishes his sword. "That archer on the other side can't seem to see or hit us from the other side. Let them come to us to check on Deerslicer and put out the fire."

Beyond the palisade is a well-trodden yard. A small wooden hut is built against the southern rock wall from where the orc are coming, facing a squat stone fortress. A guard tower stands at the north end of the edifice where the two orc watchers stand while a two-story dome anchors the south. The fortress has a brooding look about it, with narrow windows set between heavy pillars of rock.
You hear numerous grunts and orcish speaking but nothing came, yet, to you!

When I looked over, could I see anything - or do I know anything - about this sort of construction? If I can get on the other side, could I easily open the gate?
Believing he's doing an excellent job at keeping up the charade, and for some reason being egged on to continue by an ally, Deerslicer yells, "ACK! You make me drop me only alchemists's fire when me hits the ground! Why you so mean? Please, just lemme have food!"

He waits to see if Simon's ploy works. As he hangs there, he sheaths his kukri and draws his lesser bottled lightning. He motions for Gracie to climb up the palisade with him, but to stay below the top so she still has full cover.

If I climb up to stand on top of the palisade, would I have to do both an Athletics to climb and an Acrobatics to Balance, or can I just Balance on the top as a single action?

Elendyr crosses to the front of the gate and casts a potent spell, fingers dancing through arcane gestures as he chants in an archaic dialect of the Draconic tongue. A small sphere streaks from his hand to impact in the midst of the orcs, spraying motes of gleaming dust over most of them.
