If something is not in stock, for example a generic set of dice, how long does it usually take to be back in?

It really depends on the item in question. To answer your question in the most general terms possible, if an item says "currently unavailable", then that means we do not have enough information (from our distributor) to determine whether the item will be available again or not. For items that have been around a while, it most often means that the item is gone and will not be back, but for brand new items, it is generally a temporary status.
