Age Categories In PFS

Can you start in a different age category for PFS? Such as starting with an old human? Do you get the appropriate bonuses/penalties to your stats for doing so?

Ah, good to know. I ran into that question when trying to take Breadth of Experience on a gnome. I knew about not adjusting the stats, but I couldn't figure out where it said you can go past the normal starting age.
