Master proficiency in weapons in PF1 terms is like having a base attack bonus of +1 per level. If you ever leveled up in a class that didn’t give you that plus 1, you would never end up with as high an attack bonus as a character that only leveled up in full martial classes.
So if you already had master in some weapon, it is possible to get master proficiency in something else, but if you don’t, than you can’t.
Getting master proficiency in casting isn’t the same because most full casters scale to legendary, AND spells are a limited resource that needed to be cast at high rank to be comparable to martial weapon attacks. Spending two actions to cast a cantrip at master proficiency is not comparable at high levels to a martial (master) weapon attack. Sure the multiclass caster can buy a scroll to cast a high rank spell, but that is a one time thing that is pretty expensive.

And I'd say that allowing archetypes to grant higher proficiency level for spells than they do for weapons is mathematically balanced by the fact that there aren't potency runes available for spells.

So you can never get master martial and legendary casting on one character.
Which is an interesting point, as it is possible to get legendary weapon proficiency and master casting (e.g., fighter with a caster multiclass archetype; granted, it takes at least 4 feats [5 if you want two spell slots rather than one spell slot per rank], Legendary proficiency in a skill corresponding to the spell list, and still doesn't allow 9th- or 10th-rank spells). This does seem to be a deliberate design decision after the exploits in PF1 that allowed near full (or "virtually full") BAB and 9th-level spells with certain character "builds;" it prevents the martial classes from being made obsolete by caster classes...

While they don't make the most difference in the world, there's also attributes to consider, too. Not all fighters are going to maximally invest in their multiclass' casting stat, and it's impossible for them to be as invested as that class simply by virtue of them not getting a class attribute boost at first level.

You might be able to make an "optimization" case for a fighter taking the multiclassed druid archetype for casting (focus on Str and Wis). You may not get the casting stat up to +6 at 20th level, but Wis +5 isn't that far behind and it boosts Perception (commonly useful for initiative checks) and Will saves.

The reason caster archetypes boost spellcasting proficiency but martial archetypes don't boost weapon proficiency is that all classes progress their weapons, but not all get spellcasting proficiency. A multiclass archetype is meant to never make as a character as good at the classes ability as a character of that class so casters will always have their worse weapon proficiency and martials will (almost always) be behind with spells either due to not being able to raise there casting stat as high at lower levels or lagging behind in proficiency at higher levels.
